Tommy's Margarita with sour carrot juice, which I named Bunny’s Favourite, is a perfect cocktail for upcoming Easter and Cinco de Mayo. It’s a Tommy’s Margarita with sour carrot juice instead of lime and it’s super easy and zero waste, since we used the leftover carrot pulp for the garnish. Bunny’s Favorite
• 45 ml (1.5 oz) Rooster Rojo Reposado Tequila
• 22,5 ml (0.75 oz) Sour Carrot Juice*
• 10 ml (0.33 oz) agave syrup
• 1 drop saline solution
Shake with ice and strain into a Nick&Nora glass, rimmed with carrot-salt*. Garnish with a celery leaf.
*Sour Carrot Juice
• 188 g carrot juice
• 8 g citric acid
• 4 g malic acid
**Carrot-salt
• leftover carrot pulp
• equal amount of salt Dehydrate the leftover carrot pulp from juicing, mix with salt and grind until fine. Use for rimming the glass or in cooking.
