Italicus is getting more and more popular behind the bar so it was to make the Italicus Spritz, Cocktail Time style. But is this the best spritz? If you ask me, when you substitute prosecco with two things I love - fino sherry and soda water flavored with lavender bitters - yes, I think it is. Find the recipes for both the classic Italicus Spritz and the Italicus Fino Spritz below. Cheers!
Italicus Fino Spritz
● 45 ml (1.5 oz) Italicus
● 30 ml (1 oz) fino sherry
● 60 ml soda water with lavender bitters*
● 3 olives
● lemon peel, express and discard
Into a chilled wine glass filled with ice add the fino sherry first, then Italicus. Italicus is sweeter so it will mix with the sherry. Top up with lavender bitters soda water. Add 3 olives on a cocktail pick and give a gentle turn. Express oils from a lemon peel and discard.
*For the flavored soda water add 1 dash of lavender bitters for every 100 ml of cold water and add CO2 with your soda machine (be careful since it might foam over the top). Alternatively use a soda syphon or just add bitters into the cocktail before topping up with plain soda water.
Italicus Spritz
● 30 ml (1 oz) Italicus
● 60 ml (1 oz) Prosecco
● 3 olives Into a chilled wine glass filled with ice add the prosecco first, then Italicus. Italicus is sweeter so it won’t float on top like prosecco would. Give a gentle turn with the 3 olives on a cocktail pick.
