You know umami from food (or your taste buds do!) but what about in a cocktail? I made a Martini with mushrooms, sake and some really crazy garnishes to create a real umami concoction. This Martini is unlike any you’ve had before, thanks to soy sauce-infused pickled mushroom, mushroom flavoured olive oil and the green tea ice. Sounds like a lot, right? Umami Martini
● 60 ml (2 oz) KI NO BI Kyoto Dry Gin
● 15 ml (0.5 oz) Shirayuki Sake
● Chill with green tea ice
● Soy sauce-infused pickled mushroom
● 3 drops of mushroom olive oil
● 3 drops of soy sauce
Chill the mixing glass with the green tea ice. Dump the ice, add gin and sake and stir with more green tea ice. Strain into a chilled martini glass, add a soy-sauce infused pickled mushroom and 3 big drops of mushroom olive oil, followed by 3 drops of soy sauce (on the oil drops).
Soy Sauce-infused Pickled Mushrooms
● Pickled mushrooms
● Salt-reduced Soy Sauce
Stuff a small jar with pickled mushrooms and cover with salt-reduced soy sauce. Place in the fridge for at least 24 hrs.
Mushroom flavored olive oil
● 50 ml (1.33 oz) olive oil
● 3 g dried mushrooms (I recommend porcini)
Blend ingredients in a blender then filter through a coffee filter. Keep in the fridge (if your olive oil solidifies add a small amount of other vegetable oil before blending).
Green Tea Ice Make green tea (0.5 g/100 ml) then strain and place in the fridge. Cut up the ice to your desired sizes.
