Kevin Kos answers your questions Yes! There are many vegan options to wash or clarify your cocktail with, and I’ve even featured a pistachio milk-clarified Baklava Cocktail on the channel before. In reality you can use pretty much any other vegan milk alternative, but with such an array of options, how do you choose the correct one for your cocktail? The easiest way is to think about the other ingredients in your drink and to pair them with the milk 🌰. For example, if you are planning to work with whiskey you could go for hazelnut milk, or coconut milk if you want to use rum, or how about almond milk for a cocktail with arrack?
Still, feel free to experiment with the options you have on hand, as there are very unique flavors out there like in the case of pea milk 🫛. You also have the option to make these vegan milk alternatives at home, so you can introduce new flavors by roasting some nuts before making the milk, or even adding spices! Finally keep in mind that clarifying cocktails with dairy or vegan options gives you a new taste and mouthfeel, so if you want to clarify juices or highball cocktails I would suggest you use a different clarifying approach, with agar agar being one of the most commonly used. |

French 75 A cocktail made with gin is usually good when made with cognac - it adds richness and depth! Champagne and cognac are also really good friends. Consider using fresh citrus instead of Super Juice to let the champagne shine - you won't hear me say that often! Anise brightens the citrus notes in the drink, so try adding a few dashes of absinthe. The champagne flute makes it look similar to the French 75 gun, but I prefer to serve it in a coupe or white wine glass, where I can get more aromas to the nose.

Recommended Saturday watch! Speaking of clarification with vegan milk alternatives, one of my favorite examples comes from The Wee Pearl and her Key Lime Pie milk punch. Using coconut milk as a clarifying agent 🥥, this recipe makes for a wonderful cocktail with a fantastic mouthfeel and beautiful presentation! I would also highlight the making of the punch without including the base spirit for the drink, as this helps it retain its taste and texture 😋 - although you can include it if it is too bold or if it has unpleasant qualities that go against what you want in your recipe. Make sure to give this video a watch, as I'm sure you can learn a lot more than just clarifying. Cheers! |
